Philosophy

Some 15,000 years ago—at a time when our forebears were drawing on cave walls—the wild aurochs reigned over a territory so vast it stretched from Western Europe to Eastern Asia. Seven thousand years later, mankind gradually began to settle down and domesticate the aurochs. However, hunting and the expansion of farming put the species under increasing pressure. The population dwindled and by the Middle Ages, aurochs were so rare that only kings were permit-ted to hunt them.

The last living aurochs died in 1627 in the royal forest near Jaktorów, Poland. And so the aurochs—the king of all cattle, long venerated for its strength—disappeared forever, and along with it more than two million years of history. The animal that had survived harsh ice ages proved no match for the advances of man. But traces of its long presence on earth can still be found. For the legacy of the aurochs lives on today in the form of its direct descendents, domestic cattle.

We have dedicated our restaurant to the aurochs, to honor and perpetuate the memory of this remarkable beast. We strive for per-fection by exclusively serving Certified Angus Beef (CAB). Only a very small percentage of Angus Beef meets the discriminating CAB stan-dard of excellence. We hope that your dining experience with us will be memorable, and that you will forever remember the name of the animal known as the “Cattle of the Sun.”
